There are six major categories of tea. In this series, you’ll learn why each category displays its own special flavors, aromas, and sensations; how it’s produced; and where it fits in the larger contexts of tea and tea culture.
At the beginning of each session, we’ll do a brief recap of Tea 101 material. (Such as: What are the six categories? How is each one defined?) Then, we’ll move right into tasting and comparing several examples of teas from the particular category on which the session is focused.
You’ll get to taste your way through The Jasmine Pearl’s most excellent examples of each category, as well as several very choice selections from the PDX TEA library.
Through this thoroughly and informatively guided process, you’ll discover for yourself how major factors of terroir, cultivation, and processing come across in the cup.
We’ll also dig into PDX TEA’s archive of tea farming and production videos, and look at how each individual tea we sample fits into the broader definition of its category.
And this year, due to popular demand, you’ll get a new, full session devoted to preparation, brewing, and storage.
